Ginger Lemon Bars

    Glace ginger combined with lemon juice and flour then topped with flaked almonds. This delicious slice can be enjoyed with a cup of tea and kids love it.

    Serves: 12 

    • 1 3/4 cups plain flour
    • 1 cup caster sugar
    • 130g glace ginger, diced
    • 190g butter, melted
    • 1 egg, lightly beaten
    • 2 tablespoons lemon juice
    • 2/3 cup (60g) flaked almonds

    1. Preheat oven to 180 degrees C.
    2. Sift flour and sugar into a bowl. Mix in ginger, cooled butter, egg and lemon juice. Press mixture evenly over the base of a well greased lamington tin (16x26cm). Press almonds on top.
    3. Bake in preheated oven for 45 minutes, or until golden brown. Cool in tin then cut into bars.
