Date Walnut Loaf

    A delicious date and walnut loaf with a hint of mixed peel. Uses sugar rolled chopped dates. Serve buttered with a cup of tea or coffee.

    Makes: 1 loaf

    • 1 cup water
    • 60g butter
    • 1 1/2 cups sugar rolled chopped dates
    • 1/4 cup sugar
    • 1/2 cup chopped walnuts
    • 1/4 cup mixed peel
    • 1 1/2 cups self raising flour, sifted
    • 1 egg

    1. Preheat oven to 180 degrees C. Grease a 20x10cm loaf tin.
    2. Bring water and butter to a boil in a saucepan. Remove from heat then stir in dates, sugar, walnuts and peel. Stir until sugar dissolves. Briskly stir in flour then egg. Mix well.
    3. Pour into prepared tin then bake in preheated oven until it pulls away from the sides of the tin, about 45 minutes. Allow to cool before slicing.
