Barbecued Mud Crab

    Mud crab in a light marinade cooked in foil, juicy and delicious.

    Serves: 2 

    • fresh mud crab, cleaned and broken up
    • vinegar (your preference), 1/8 of a cup
    • extra virgin olive oil, 1/8 of a cup
    • juice and zest of 1 lemon
    • 2 cloves garlic (don't even think of using powdered), minced
    • salt + freshly ground black pepper

    1. Clean the crab, break into chunks and crack the claws with the back of a knife.
    2. Put crab onto a large double thickness piece of foil.
    3. Add all the other ingredients to a bowl and mix well.
    4. Pour marinade over crab and make the foil into a sealed bag.
    5. Place on the hotplate for around 8-10 minutes, until the shell has all turned red.


    I like this with a simple salad and maybe some decent crusty bread
