No Pastry Zucchini Quiche

    A tasty bacon and zucchini quiche without a pastry base. Chock full of grated zucchini, cheese and bacon then topped with fresh sliced tomatoes. Baked until set.

    Ingredients
    Serves: 4 

    • 5 eggs
    • 1/2 cup vegetable oil
    • 380g zucchini, grated
    • 1 onion, grated
    • 1 cup self raising flour
    • 1 cup grated cheese
    • 3 rashers bacon
    • 1 tomato, sliced

    Directions
    Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Preheat oven to 190 degrees C.
    2. Beat together eggs and oil. Mix in the zucchini and onion. Whisk in the flour then fold in the cheese. In a greased pie dish, lay in the bacon. Pour in the egg mixture then place a layer of tomatoes on top.
    3. Bake in oven until egg is set and top is golden, about 30 minutes.
