Currant Welsh Griddle Cakes

    Small, currant filled sweet cakes are fried on a hot griddle or frying pan. They have a hint of cinnamon and nutmeg and are sweetened with golden syrup.

    Makes: 12 cakes

    • 500g self raising flour
    • 1 pinch nutmeg, to taste
    • 1 pinch cinnamon, to taste
    • 130g butter
    • 130g margarine or lard
    • 220g caster sugar
    • 90g currants
    • 2 eggs, beaten with a dash of milk
    • 1 level tablespoon golden syrup
    • 1 pinch salt, to taste

    1. Sift flour, salt, nutmeg and cinnamon into a bowl. Mix in butter and margarine. Mix in sugar and currants. Add eggs and golden syrup.
    2. Roll out to about 1cm thick and cut out with a 5cm cutter. Cook in a hot frying pan until brown on both sides.
