Carob Nut Brownies

    Carob slice filled with sunflower seeds, walnuts and wholemeal flour. These are a healthier dessert option or a better sweet treat for your wee one's after school snack.

    Makes: 12 bars

    • 1/2 cup butter
    • 1/2 cup honey
    • 2 eggs
    • 1/2 teaspoon salt
    • 1 teaspoon vanilla
    • 1/3 cup carob powder
    • 2/3 cup wholemeal flour
    • 2 tablespoons milk powder
    • 1 teaspoon baking powder
    • 2/3 cup sunflower seeds
    • 1/2 cup roasted peanuts, chopped

    1. Preheat oven to 170 degrees C. Grease a 18x28cm cake tin.
    2. Cream together butter and honey. Beat in eggs, salt and vanilla. Stir in carob, wholemeal flour, milk powder and baking powder. Blend into a creamed mixture. Stir in sunflower seeds and peanuts.
    3. Turn into a greased tin and bake for 20-25 minutes. Allow to cool then cut into bars.


    You can use walnuts in place of the peanuts or sunflower seeds.
