Peanut Roughs

    Rich and tasty rolled oat biscuits stuffed with chunks of salted peanuts. These tasty bickies are a real treat in your kids or spouse's lunch box. Yummy.

    Makes: 40 biscuits

    • 3/4 cup (90g) self raising flour
    • 2 cups (180g) rolled oats
    • 1 cup (160g) brown sugar
    • 130g salted peanuts, roughly chopped
    • 130g butter
    • 2 tablespoons golden syrup
    • 1 egg, beaten

    1. Preheat oven to 180 degrees C.
    2. Sift flour, add oats, brown sugar and roughly chopped peanuts. Mix well.
    3. Melt butter, add golden syrup and beaten egg. Add to dry ingredients. Mix well.
    4. Drop in teaspoonfuls on lightly greased baking tray. Bake for 12-15 minutes or until golden brown.
