Oat Crunchies

    These quick and easy biscuits are packed with rolled oats and walnuts. They are topped with a sprinkle of sugar before being baked to golden brown.

    Ingredients
    Makes: 42 biscuits

    • 130g butter
    • 1/2 cup sugar
    • 1/2 cup brown sugar
    • 1 egg
    • 1/4 teaspoon vanilla
    • 3/4 cup plain flour
    • 1/4 cup self raising flour
    • 1/4 teaspoon salt
    • 1/2 teaspoon bicarb soda
    • 3/4 cup rolled oats
    • 1/4 cup chopped walnuts
    • extra sugar

    Directions

    1. Preheat oven to 180 degrees C.
    2. Cream butter and sugars until light and fluffy. Beat in egg and vanilla. Add sifted flours, salt and bicarb. Add oats and walnuts. Blend well.
    3. Place teaspoonfuls on ungreased baking trays. Sprinkle with sugar then bake for 10-12 minutes. Leave on tray a few minutes before transferring to cool on a wire rack.
