Rum and Fruit Torrone

    Made with cottage cheese, this soft and chewy torrone is spiked with rum and chocolate. It has glace cherries, ginger, almonds, sultanas and chunks of biscuit crumbs.

    Serves: 12 

    • 500g continental style cottage cheese
    • 250g packet drinking chocolate
    • 1 egg
    • 130g butter, melted
    • 2 tablespoons rum
    • 1/4 cup diced glace cherries
    • 1/4 cup diced glace ginger
    • 1/2 cup diced almonds
    • 1/2 cup diced sultanas
    • 1 (250g) packed of milk arrowroot biscuits, broken into rough pieces

    Preparation:20min  ›  Extra time:8min chilling  ›  Ready in:28min 

    1. Thoroughly beat together all ingredients except the biscuits. Stir in biscuits. Press mixture into well buttered 20cm springfrom tin. Refrigerate overnight.
    2. Remove from tin then decorate with whipped cream, cherries and almonds.
