Upside Down Pizza Salad

    A delicious warm side dish salad with fresh tomatoes, breadcrumbs and Parmesan cheese gilled then topped with salami, bocconcini and homemade basil pesto.

    Ingredients
    Serves: 4 

    • 4 tomatoes, diced
    • 1/4 cup basil leaves, torn
    • 2 cups stale bread crumbs
    • 1 cup grated Parmesan cheese
    • pepper, to taste
    • 1/4 cup olive oil, for drizzling
    • 8-12 slices salami
    • 1 cup boccocini mozzarella, diced
    • 1/4 cup basil
    • 1/4 cup parsley
    • 1/4 cup olive oil

    1. In a greased gill-proof dish, spread in the tomatoes. Sprinkle on the basil leaves and the breadcrumbs. Pour over the Parmesan cheese, sprinkle on the pepper, then drizzle on the olive oil. Set under the ovens griller then grill until it begins to crisp, about 5 minutes.
    2. Remove from oven then top with salami then mozzarella. In food processor, combine basil, parsley and olive oil. Process then drizzle over the top to serve.
