Ok, this is probably a brainless recipe, but it's tasty. A slice of toast topped with a fried slice of leftover ham and an egg that has been also been fried.
In a frying pan melt the knob of butter. Place in the ham and fry until brown on both sides. Remove and crack in the egg. Cover with a lid an allow to cook about 3 minutes, until the whites are no longer runny. Place ham on toast. Top with the egg. Season with salt and pepper.
