Gingerbread Man Biscuits

    These tasty gingerbread men are spiced with cinnamon, nutmeg, cardamom and ginger. The trick is to chill the dough before rolling it out, this makes cutting easier.

    Makes: 20 gingerbread men

    • 250g raw sugar
    • 130g golden syrup
    • 30g butter
    • 1 tablespoon grated lemon rind
    • 1 tablespoon lemon juice
    • 1 small egg
    • 380g plain flour
    • 1 teaspoon salt
    • 1 teaspoon baking powder
    • 1/2 teaspoon cinnamon
    • 1/2 teaspoon nutmeg
    • 1/2 teaspoon cardamom
    • 1 1/2 teaspoons ground ginger

    1. In a saucepan, combine sugar, golden syrup, butter, lemon rind and juice. Melt over medium heat and mix until well combined. Remove from heat and cool.
    2. Mix in the egg then sift in the flour, salt, baking powder and spices. Knead into a soft dough then chill, covered, for 30 minutes.
    3. Roll out to 1/2 cm on a lightly floured bench. Cut into shapes. Decorate then bake at 170 degrees C for 15 minutes.
