Basic Rich Cream Dough

    A basic cream dough that can be used in a verity of recipes. It is very rich with cream, egg yolks, evaporated milk and bouts of butter and sugar.

    Makes: 500 g

    • 30g yeast
    • 1/4 cup warm water
    • 1 cup cream
    • 3 egg yolks
    • 1/4 cup sugar
    • softened butter, as needed
    • 1/4 cup evaporated milk
    • 3 1/3 cups flour
    • 1 teaspoon salt
    • 130g butter

    1. Dissolve yeast in warm water. Mix together cream egg yolks, sugar and salt. Cut in 130g butter. Stir in yeast mixture then mix well.
    2. Spread a light film of butter over surface of dough. Cover tightly with cling wrap and refrigerate overnight.
    3. Can be stored in refrigerator for 4-5 days.
