Coconut Oat Shortbread

    Desiccated coconut and rolled oats combined with melted butter then baked until golden brown makes a delicious shortbread that is great for afternoon tea.

    Serves: 6 

    • 130g butter, melted
    • 2 tablespoons milk
    • 1/2 cup sugar
    • 1 cup (90g) coconut
    • 2 cups (190g) rolled oats

    Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

    1. Preheat oven to 160 degrees C. Butter a baking tray.
    2. Mix together butter milk and sugar until well mixed. Stir in coconut and rolled oats.
    3. Spread over buttered tray, then bake in preheated oven for about 30 minutes. Cut while hot then allow to cool on the tray.
