Coconut Oat Shortbread
Desiccated coconut and rolled oats combined with melted butter then baked until golden brown makes a delicious shortbread that is great for afternoon tea.

130g butter, melted
2 tablespoons milk
1/2 cup sugar
1 cup (90g) coconut
2 cups (190g) rolled oats
- Preheat oven to 160 degrees C. Butter a baking tray.
- Mix together butter milk and sugar until well mixed. Stir in coconut and rolled oats.
- Spread over buttered tray, then bake in preheated oven for about 30 minutes. Cut while hot then allow to cool on the tray.
