    It's too hot for hot desserts here. Besides if you have an ice-cream machine this is so easy and so much better.

    Ingredients
    Serves: 4 

    • 600ml fresh store-bought brandy custard
    • 300ml double cream
    • 6 tbs icing sugar
    • 375g mixed dried fruit
    • 425 tinned cherries in syrup
    • juice of 1 orange
    • mixed spice to taste

    Directions
    Preparation:10min  ›  Cook:20min  ›  Extra time:8hours soaking  ›  Ready in:8hours30min 

    1. Soak dried fruit overnight in orange juice. Stir in mixed spice. Store in a cook, dark place.
    2. Blend cream, custard and sugar, place in pre-cooled ice-cream machine until thickened.
    3. Fold through dried fruit and cherries. Freeze until firm.
    4. Enjoy!

    Tip

    You can use the syrup left over from the cherries to make a sauce - just thicken with some cornflour on the stove.
