Creamy Crayfish Pie

Crayfish topped with a creamy sauce and breadcrumbs then baked until golden. The cheeky secret to this delicious crayfish pie is the shot of sherry added to the sauce.

Serves: 4 

  • 60g butter
  • 2 tablespoons flour
  • salt and pepper, to taste
  • 300ml milk
  • 30ml dry sherry
  • 1 teaspoon sugar
  • 1/2 lemon, juiced
  • 1/2 teaspoon mustard
  • 500g cooked crayfish, flaked
  • 1 1/2 cups breadcrumbs

  1. Preheat oven to 200 degrees C. Lightly grease a baking dish.
  2. Melt butter in a saucepan over medium high heat. Whisk in flour with a fork then season with salt and pepper. Whisk in the milk and sherry then simmer for about 4 minutes. Whisk in the sugar, lemon juice and mustard.
  3. Lay the crayfish in the baking dish, pour on the sauce then top with the breadcrumbs. Bake in preheated oven until golden brown, about 20 minutes.
