Whitebait Medallions

    Tasty little whitebait and egg medallions that are seasoned with salt, pepper and chives. They are great any time of the day so enjoy.

    Serves: 2 

    • 1 egg
    • 1 tablespoon milk
    • 1 teaspoon chives
    • 1 cup whitebait
    • salt and pepper, to taste
    • 1 tablespoon butter

    Preparation:5min  ›  Cook:10min  ›  Ready in:15min 

    1. Whisk together egg and milk then stir in the whitebait and chives. Season with salt and pepper.
    2. Heat butter in a frying pan over medium then pour in tablespoonfuls of the whitebait mixture. Cook until golden brown on each side.
