Kumara Poi

    Grated kumara and fresh grated coconut seasoned with a dash of salt then slowly baked in the oven for about an hour.

    • 2 cups grated kumara
    • 1/2 cup raw grated coconut
    • 1 teaspoon salt

    1. Preheat oven to 180 degrees C. Line a baking dish with tin foil. Spray with cooking spray.
    2. Combine kumara, coconut and salt. Place in prepared baking dish, cover then bake in preheated oven for 1 hour then serve.


    Kumara is known in other parts of the world as a sweet potato.
