Egg Yolk Sponge

    Probably the fluffiest sponge cake ever. This sponge is tasty however you serve it, and if it doesn't get gobbled up, it's perfect for lamingtons.

    Serves: 6 

    • 3/4 cup self raising flour
    • 1 tablespoon cornflour
    • 4 egg yolks
    • 2 tablespoons hot water
    • 1/2 cup caster sugar
    • 2 tablespoons hot water, extra

    Preparation:15min  ›  Cook:25min  ›  Ready in:40min 

    1. Preheat oven to 180 degrees C. Lightly grease a 20cm round cake tin.
    2. Sift together flour and cornflour. Whip together egg yolks and hot water until thick and creamy. Gradually beat in sugar until dissolved.
    3. Gently mix the flour mixture into the yolk mixture. Mix in additional hot water. Pour into prepared cake tin then bake in preheated oven for 20-25 minutes.

    It could have been that I didnt let the egg yolks warm up to room temperature....but this resembled a small windowless building rather than a sponge. It is currently in the freezer, and will one day act as the base of a desert with some stewed fruit and icecream  -  25 Apr 2018
