Quick and easy marshmallow that is made with only four ingredients: sugar, water, gelatine and salt. So simple and yet oh so good.

- 2 cups (400g) white sugar
- 1 cup (250ml) water
- 1 rounded tablespoon gelatine
- 1/4 cup (60g) cold water
- salt, to taste

- In one sauce pan, dissolve sugar and 1 cup water, stirring over a low heat (do not boil).
- In another saucepan boil gelatine in 1/4 cup water for 1 minute, stirring continuously.
- Tip gelatine into sugar water then add a few grains of salt. Cool then whip util firm.
