    The grated rind of one orange gives this cake its flavour. It can be iced with your favourite icing, or a mix of orange juice, butter and icing sugar.

    Ingredients
    Serves: 6 

    • 1 1/4 cups (280g) sugar
    • 1 1/4 cups (160g) self raising flour
    • 60g melted butter
    • 1 orange rind, grated
    • 2 eggs
    • 1/2 cup (125ml) milk
    • 1 pinch salt, to taste

    1. Preheat oven to 170 degrees C. Grease a spring form tin or 2 log tins.
    2. Sift sugar and flour with a pinch of salt. Stir in butter, orange rind, eggs and milk until well mixed.
    3. Pour into prepared tin then bake in preheated oven for 45-60 minutes, until a toothpick inserted into the centre comes out clean.

    Icing option

    You can make an icing for this cake out of 1 teaspoon of melted butter and a little orange juice, mixed into icing sugar or you can just use your favourite icing recipe.
