Fruit Scones

    Tasty scones filled with delicious mixed fruits. These slightly sweet scones have a hint of cinnamon added and are decadent with butter and whipped cream.

    Serves: 6 

    • 50g copha or Kremelta(TM)
    • 200ml milk
    • 1 egg, whipped
    • 380g self raising flour
    • 1 teaspoon salt
    • 2 tablespoons sugar
    • 1 cup mixed dried fruit
    • 1 teaspoon cinnamon

    1. Preheat oven to 230 degrees C.
    2. Melt copha until luke warm. Mix with the milk then add the whipped egg. In a separate bowl, sift together flour, salt and sugar. Stir in the mixed fruit and cinnamon.
    3. Stir in the copha mixture to form a dough. Knead dough then cut into scones. Bake on baking tray in preheated oven until golden brown and cooked though.
