All Bran Loaf

    A tasty loaf made of All Bran, mixed peel and lemon rind. Makes a tasty treat in your wee one's lunch box, or as an after school snack that is high in fibre.

    Makes: 1 loaf

    • 1 cup All-Bran(TM)
    • 1 cup raisins, diced
    • 1 tablespoon mixed peel, diced
    • 1 lemon rind, finely grated
    • 1 cup brown sugar
    • 1 cup milk
    • 1 1/2 cups self raising flour
    • 1 pinch salt
    • 1/2 teaspoon vanilla

    1. Put All Bran into a large basin. Add raisins, diced peel, fruit rind and sugar. Mix lightly. Add milk then mix only until blended. Leave 2 hours.
    2. Preheat oven to 160 degrees C. Well grease and flour a loaf tin.
    3. Sift together flour and salt. Add vanilla, mix until blended. Empty into prepared tins then bake in preheated oven for 30-45 minutes. Leave for a couple of days before slicing.
