Not a plain old peanut butter cookie, this biscuit has a hint of orange rind and a handful of sultanas. They are quick and easy to make and kids enjoy them.
Cream together peanut butter, margarine, orange rind and sugars until light and fluffy. Beat in egg. Stir in sultanas. Stir in flour. Roll dough into balls the size of walnuts.
Place well apart on baking tray. Stamp on criss-cross patterns with the back of a fork. Bake in the centre of the oven for 25 minutes.
These are yummy. We used choc chips rather than sultanas due to a fussy eater, worked really well. 25min is too long, cooked for 10-15 min each tray full.
