Peanut Butter Cookies with Sultanas
Not a plain old peanut butter cookie, this biscuit has a hint of orange rind and a handful of sultanas. They are quick and easy to make and kids enjoy them.

Makes: 30 biscuits
60g peanut butter
1/2 orange rind, grated
50g light brown sugar
60g caster sugar
1 small egg
50g raisins or sultanas
130g self raising flour, sifted
- Preheat oven to 180 degrees C.
- Cream together peanut butter, margarine, orange rind and sugars until light and fluffy. Beat in egg. Stir in sultanas. Stir in flour. Roll dough into balls the size of walnuts.
- Place well apart on baking tray. Stamp on criss-cross patterns with the back of a fork. Bake in the centre of the oven for 25 minutes.

These are yummy. We used choc chips rather than sultanas due to a fussy eater, worked really well. 25min is too long, cooked for 10-15 min each tray full.
