Bran and Fruit Loaf

    A healthy brown loaf made with wholemeal flour, unprocessed bran, sultanas, muesli and raw sugar. A hint of mixed spice and grated fruit peel is added for flavour.

    Makes: 1 loaf

    • 3/4 cup unprocessed bran
    • 1 cup sultanas
    • 3/4 muesli or rolled oats
    • 3/4 cup raw sugar
    • 1 cup milk, warm
    • 1 1/2 cups wholemeal self raising flour
    • 1 egg, beaten
    • 1/2 teaspoon mixed spice, to taste
    • peel, to taste

    1. Preheat oven to 180 degrees C. Grease and line a 23x12cm loaf tin with greaseproof paper.
    2. Put bran, sultanas, muesli, sugar and warm milk into a bowl and mix well. Allow to stand for 2 hours.
    3. Add sifted flour and beaten egg then mix well. Pour into prepared loaf tin. Bake in preheated oven until cooked though, about 1 hour.
