Sage and Onion Beef Rolls

    Sage is one of my favourite ingredients and it isn't used nearly enough. This simple recipe uses a great sage and onion stuffing that is wrapped in beef. Mmm.

    Serves: 4 

    • Stuffing
    • 4 slices of white bread
    • 1 small onion, finely diced
    • 1 teaspoon ground sage
    • salt and pepper, to taste
    • 1 egg, lightly whisked
    • Casserole
    • 6 thin slices of round steak
    • 1 tablespoon oil
    • 2 cup beef stock
    • salt and pepper, to taste

    1. Break the bread into small pieces and put into a bowl; add the diced onion, sage, salt and pepper and egg. Mix to combine, if too dry add a little water to ensure the bread is all moistened.
    2. Lay the thin slices of meat out and spread with the stuffing mixture. Roll into a sausage and secure with a toothpick or two.
    3. Heat the oil in a frypan and brown the rolled meat then place in a casserole dish. Add the hot beef stock, onion, salt and pepper.
    4. Place the casserole dish in an oven preheated to 180 degrees C and cook for 90 minutes, stir and check there is enough stock every 20 minutes. Remove skewers to serve.
