Herb Crusted Lamb Fillet

    This is a great dinner that can be used as an evening dinner or dressed up for a formal occasion as in the photo. Feel free to change the herbs in the crumb to what you have on hand.

    Serves: 4 

    • Lamb
    • 1 lamb loin
    • 4 cloves garlic, crushed
    • 1/4 cup lemon juice
    • 2 tablespoons olive oil
    • Crust
    • 1/2 cup fresh breadcrumbs
    • 1/4 cup diced parsley
    • 2 cloves garlic, crushed
    • 1 tablespoon lemon zest
    • 1 tablespoon olive oil

    1. Place the lamb loin in a dish and cover with the combined garlic, lemon juice and olive oil then let marinade for 3 hours.
    2. Prepare the crumb by combining the breadcrumbs, parsley, garlic, lemon zest and olive oil. Mix well.
    3. Preheat the oven to 160 degrees C. Drain the lamb then cook uncovered for 40 minutes.
    4. Press the crumb on the top of the lamb and continue to cook until cooked to your preferred doneness, about 30 minutes. Rest for 10 minutes then serve with mashed potato and asparagus, or other seasonal vegetables.
