A quick and easy meal of curried cocktail prawns. This quick and easy dish is great served over basmati rice and makes an easy lunch or filling dinner.

Serves: 2 

  • 150g cooked cocktail prawns
  • 1 desertspoon butter
  • 1 teaspoon curry powder
  • 1 heaped dessertspoon plain flour
  • 1 1/2-2 cups milk
  • 1/4 teaspoon salt
  • cayenne, to taste
  • 1 dessertspoon vinegar or lemon juice
  • 1 sprig parsley, chopped

Preparation:5min  ›  Cook:15min  ›  Ready in:20min 

  1. Melt butter in a frying pan, add curry powder and cook for 1 minute, stirring.
  2. Remove from heat, stir in flour then mix will. Gradually add milk and stir until smooth.
  3. Return to stove and add cayenne and salt. Boil, stirring. Add prawns, vinegar and parsley then cook for 1 minute more.
