Roast Chicken Drumsticks and Yams

Cooking for 2 or 3 I don't roast a whole chicken, it's cheaper to just roast up some drumsticks, potatoes and yams. Dipped in butter, you get a crispy skin, and nobody fights over the legs!

Serves: 3 

  • 60g butter, melted
  • 60g olive oil
  • salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 3 potatoes, peeled and diced
  • 1 1/2 cup New Zealand yams
  • 6 chicken drumsticks
  • chicken seasoning, to taste
  • 1 teaspoon honey

  1. Preheat oven to 230 degrees C. Combine melted butter, oil, salt, pepper and garlic powder.
  2. Toss the potatoes and yams in the butter mixture then set in roasting pan. Dip the drumsticks in the remaining butter mixture then set in the roasting pan. Sprinkle chicken seasoning over the chicken. Drizzle honey over the yams.
  3. Roast in preheated oven for 40 minutes, until chicken flesh is white and pulls away from the bone.


New Zealand yams are usually only available in New Zealand and South America. They are sometimes known as oca and are a small vegetable with the flavour of a lemony parsnip. If you can not get yams, use parsnip instead.

Cook's Tip

The trick to a killer roast is your roasting pan. Make sure the bottom of your roasting pan is flat and about 1/4cm thick. That will give your potatoes a super crispy bottom.
