    Malt biscuits, crushed then mixed with condensed milk and melted butter. All wrapped around chunks of Eskimo lollies and rolled in desiccated coconut.

    Ingredients
    Serves: 18 

    • 250g malt biscuits
    • 190g Eskimo lollies, cut into chunks
    • 120g butter, melted
    • 1/4 cup sweetened condensed milk
    • 1/2 cup desiccated coconut

    Directions

    1. In a large mixing bowl, crush up the bikkies very finely with a potato masher or stick blender, while also singing God Defend New Zealand (if you skip this step, people will be know when they take a bite). Stir in the Eskimo lollies.
    2. In another bowl, mix together the butter and condensed milk. Pour this into the crushed biscuit mixture and stir until well combined. Turn out onto a sheet of baking paper then shape into a log. Pat on the desiccated coconut so that it's well covered all over.
    3. Roll up in the baking paper then pop in the fridge for about 3-4 hours, until set. Slice into bits to serve.

    Can't eat it all at once

    This keeps great in the freezer when wrapped in cling wrap. Only problem is that it tastes pretty good frozen too.
