Zucchini Tea Loaf

    A tasty tea loaf with loaded with freshly grated zucchini, a hint of cinnamon and a dash of mixed spice. Makes a delicious afternoon tea or lunch box treat.

    • 3 eggs
    • 1 cup (250ml) oil
    • 1 cup (220g) sugar
    • 1/2 teaspoon vanilla
    • 300g zucchini, peeled and grated
    • 2 cups (250g) flour
    • 1 teaspoon bicarb soda
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1 teaspoon ground cinnamon
    • 1 teaspoon mixed spice
    • 120g walnuts, chopped

    1. Preheat oven to 180 degrees. Grease a loaf tin.
    2. Beat eggs, oil, sugar and vanilla until light. Stir in the zucchini. Sift together the flour, bicarb soda, baking powder, salt, cinnamon and mixed spice.
    3. Combine the wet and dry mixtures, fold in the walnuts then pour into the greased loaf tin. Bake in preheated oven, middle shelf, for 60-70 minutes.
