Ingredients

- 500g sausage meat
- 1 cup of diced celery
- 1 tbsp chopped parsley
- 2 eggs, lightly beaten
- 45ml brandy
- chopped apple
- 190g diced bacon
- 2/3 cup finely chopped onion
- 6cups bread crumbs
- salt & pepper with 1 tsp mixed herbs
- 1/4 cup chopped almonds

- In a fry pan cook sausage meat, celery & onion till sausage & bacon are cooked.
- Place in a bowl with bread crumbs and other ingredients and mix well.
- When cooking in a large loaf pan, cook at 180 deg for 50 min. Check to see how it's browning , and cover with foil for last 10 mins.

Fantastic! A bit frightening at first - with 500g Sausage meat! - but with a well stuffed turkey it worked to great acclaim. Only change was to drain the fat out of the sausage/bacon/onion mixture after cooking it. This di not detract from the overall effect at all. - 26 Dec 2014
