Auntie Joyce's Turkey Stuffing

This has been a favorite family receipe for years and is especially good with the turkey can be stuffed or made separate.

Serves: 4 

  • 500g sausage meat
  • 1 cup of diced celery
  • 1 tbsp chopped parsley
  • 2 eggs, lightly beaten
  • 45ml brandy
  • chopped apple
  • 190g diced bacon
  • 2/3 cup finely chopped onion
  • 6cups bread crumbs
  • salt & pepper with 1 tsp mixed herbs
  • 1/4 cup chopped almonds

Preparation:10min  ›  Cook:1hour  ›  Ready in:1hour10min 

  1. In a fry pan cook sausage meat, celery & onion till sausage & bacon are cooked.
  2. Place in a bowl with bread crumbs and other ingredients and mix well.
  3. When cooking in a large loaf pan, cook at 180 deg for 50 min. Check to see how it's browning , and cover with foil for last 10 mins.

Fantastic! A bit frightening at first - with 500g Sausage meat! - but with a well stuffed turkey it worked to great acclaim. Only change was to drain the fat out of the sausage/bacon/onion mixture after cooking it. This di not detract from the overall effect at all. - 26 Dec 2014
