Honey Sponge

    This tasty honey sponge is made with arrowroot, only a hint of wheat flour and touch of honey. It makes a great dessert or a tasty afternoon tea.

    Serves: 8 

    • 3 eggs
    • 1/2 cup (110g) castor sugar
    • 1/2 cup (60g) arrowroot
    • 2 heaped teaspoons flour
    • 1/2 teaspoon bicarb soda
    • 1 teaspoon cream of tartar
    • 1 tablespoon honey

    1. Preheat oven to 180 degrees C. Grease a cake tin.
    2. Beat egg whites, add sugar then egg yolks. Add flour and other dry ingredients. Add honey last then mix will.
    3. Pour into the cake tin then bake in preheated oven for 15-20 minutes. Fill with mock cream or serve plain.
