A tasty sausage made from minced topside and bacon. Boiled until done then served, thinly sliced, with salad.

Serves: 6 

  • 500g minced topside
  • 250g bacon rashers, finely diced, rind removed
  • 1 cups soft breadcrumbs
  • 1 tablespoon tomato sauce
  • 1 tablespoon Worcestershire sauce
  • 1 egg
  • salt and pepper, to taste
  • 1/2 cup baked breadcrumbs

  1. Combine topside, bacon and breadcrumbs. Beat egg and combine with tomato sauce, Worcestershire sauce, salt and pepper. Mix egg mixture into the bacon and topside mixture.
  2. Roll into a log then flour lightly on the outside. Wrap in several pieces of greaseproof paper.
  3. Bring a large saucepan to a rapid boil, add the wrapped topside, then boil for 2 1/2 hours (or pressure cook for 30 minutes). Remove from water then allow to cool until cold. Roll in baked breadcrumbs.
  4. Serve cold, thinly sliced, with salad.
