Walnut Hedgehog Slice

    With sweet biscuits, margarine, cocoa powder, walnuts and rum, this hedgehog slice will leaving you wanting more. Makes a nice afternoon tea.

    Serves: 8 

    • 250g plain sweet biscuits
    • 130g margarine
    • 130g light brown or white sugar
    • 1 tablespoon cocoa
    • 1/2 cup walnuts
    • sherry or rum, to taste

    Preparation:15min  ›  Extra time:1hour chilling  ›  Ready in:1hour15min 

    1. Crush biscuits roughly then put in a bowl. Melt the margarine, sugar and cocoa together. Add the sherry or rum. Stir in the biscuits then spoon in to a flat tin and smooth down with the back of a spoon.
    2. Refrigerate until firm then cut into slices with a warm knife.

    Cook's Note

    You can add 1 raw egg to make it richer, if you like.
