    These delicious wholemeal pancakes are mixed in your blender, for a easy and no mess breakfast. Fried in ghee and topped with your favourite fresh fruit.

    Ingredients
    Makes: 18 pancakes

    • 1/2 cup (80g) wholemeal flour
    • 1/2 cup (80g) wholemeal self raising flour
    • 2 eggs, beaten
    • 3/4 cup water
    • 1 cup buttermilk
    • salt, to taste
    • 1 tablespoon ghee, for frying

    Preparation:5min  ›  Cook:15min  ›  Extra time:1hour resting  ›  Ready in:1hour20min 

    1. Using your blender, combine all ingredients. Allow to sit for 1 hour to break up the cellulose in the flour.
    2. Melt a little ghee in a frying pan over medium high heat. Pour in enough of your batter to make a pancake. Allow to cook until the edges begin to bubble and dry out. Flip with a large spatula and then cook until golden brown.
    3. Repeat with remaining mixture. Serve with fresh fruit, like sliced bananas and golden syrup, or just enjoy with butter.

    These were ok, nothing special. I did use regular self rising flour instead of whole meal because I could not find it locally. I had to add an extra 1/2cup of self rising flour. - 26 May 2013
