    A classic Scottish soup based on leeks and chicken. These quantities make enough for 12. Watch this recipe being made in the Allrecipes Cock-a-Leekie Soup Video.

    Ingredients
    Serves: 12 

    • 1.75kg chicken thighs
    • 2.5 litres water
    • 1 onion, chopped
    • 50g pearl barley
    • 275ml chicken stock
    • 7 leeks, sliced
    • 2 sticks celery, sliced
    • 1 sprig fresh thyme, leaves chopped
    • small handful chopped fresh parsley
    • 1 teaspoon salt
    • 1/2 teaspoon freshly ground black pepper

    Preparation:20min  ›  Cook:1hour30min  ›  Ready in:1hour50min 

    1. In a large pot over high heat, combine the chicken, water, onion and pearl barley. Bring to a boil, reduce heat to low and simmer for 1 hour. Remove chicken, discard the bones and skin, chop meat into bite size pieces and return to the pot.
    2. Add the chicken stock, leeks, celery, thyme leaves, parsley, salt and pepper. Simmer for 30 more minutes, or until all vegetables are tender.

    very good soup, my friends loved it. I didn't use quite as much leeks as called for because the leeks I found were quite big. It served 12 people with leftovers, it was a good lunch.  -  14 May 2002  (Review from Allrecipes USA and Canada)
