Mean As Pumpkin Soup

    Pumpkin soup the Kiwi way. Without all the frilly spices and herbs, this is a classic creamy pumpkin soup with a hint of onion and bacon. Nothing better on a cold day.

    Serves: 6 

    • 30g butter
    • 3 slices bacon, diced
    • 2 onions, diced
    • 2 1/2 cups water
    • 3 chicken stock cubes
    • 1 kg pumpkin, peeled and diced
    • 1 cup light cream
    • salt and pepper, to taste

    1. Heat the butter in the bottom of a large saucepan. Saute the bacon and onion until the onion is tender. Pour in the water, stock cubes and pumpkin. Simmer until the pumpkin is soft.
    2. Using an immersion blender, puree the soup. Add in the cream and continue to puree until smooth. Season to taste with salt and pepper.
    3. Serve with a knob of butter.
