Pork and Lotus Soup

This is a classic Chinese soup with very simple ingredients - if you can find fresh lotus root! It's often available at Chinese shops and the market.

- 400g boneless pork spare ribs
- 2 tomatoes
- 1 lotus root
- 3-4 large slices ginger
- 6 cups water, or as needed
- salt to taste

- Soak the ribs in cold water for 10 minutes and rinse well. Put the ribs into a pot of cold water, bring to the boil and skim the foam. Drain.
- Boil 4 cups water, add the ribs and ginger, cover and simmer for 1 hour. Dice the tomatoes and slice the lotus root.
- After 1 hour, add the tomatoes and simmer another 30 minutes. Add the lotus root and simmer for another 40 minutes. Season with salt and serve.
