    Oyster mushrooms are a delicacy and are best with a simple presentation. This soup has prawns and bean sprouts.

    Ingredients
    Serves: 2 

    • 150g oyster mushrooms
    • 1 teaspoon minced fresh ginger
    • 1 teaspoon small dried prawns
    • 1 tomato, diced
    • 800ml water
    • 70g bean sprouts
    • salt to taste
    • drop sesame oil

    Directions

    1. Heat a little oil in a hot wok and saute the ginger and prawns until fragrant. Add the tomato and stir-fry until soft. Add the water and bring to a boil.
    2. Add the oyster mushrooms and simmer for ten minutes. Add the bean sprouts and simmer two minutes more. Season with salt and sesame oil and serve.

    Tip:

    Tiny dried prawns or shrimp can be found in Asian shops.
