Sticky Pork and Rice Balls

    These sticky rice balls have a delicious pork filling. They are very pretty looking even if they're a little bit of work.

    Serves: 2 

    • 100g glutinous rice
    • 1 egg
    • 1 small knob ginger, minced
    • salt to taste
    • soy sauce to taste
    • 120g pork mince
    • 2 tablespoons soy flour
    • 1 tablespoon chicken stock
    • goji berries (wolfberries) to garnish (optional)

    1. Rinse the glutinous rice well and let soak in cold water for at least 3 hours.
    2. Beat the egg in a large bowl then mix in the ginger and salt and soy sauce to taste. Add the pork mince, soy flour and chicken stock. Stir well for a few minutes.
    3. Drain the glutinous rice and set aside. Roll the meat mixture into bite-sized balls. Roll the balls in sticky rice until completely coated.
    4. Place six balls at a time in the steamer and steam for 30 minutes. Remove the balls and garnish with goji berries.


    You can find goji berries in Asian shops.
