Roast the peanuts in the oven at 150 degrees C for 25 minutes or until cooked.
Put the sugar in a saucepan, add just enough water to cover the sugar, and simmer 20 minutes. Add the maltose. When the maltose has dissolved, stir the syrup until thickened. Test the syrup by dripping a little in a bowl of cold water. If the syrup is still sticky simmer for a few more minutes and try again. When it becomes brittle, it is ready. Mix in the oil, stirring well.
Add the peanuts and stir quickly. Pour into a greased baking dish and flatten. Let cool slightly and cut into small rectangles. Let cool and enjoy!
