Twice-Fried Sweet and Sour Pork

    To make really good sweet and sour pork you need to fry the pork twice. This dish is sure to please!

    Serves: 2 

    • 300g pork tenderloin, sliced into strips
    • 1/2 teaspoon salt
    • 1/4 teaspoon pepper
    • 1 teaspoon Chinese cooking wine
    • 3 tablespoons flour
    • 1 tablespoon cornflour
    • 2 tablespoons tomato puree
    • 3 tablespoon rice vinegar
    • 3 tablespoons white sugar
    • 1 teaspoon minced garlic

    1. Mix the pork with salt, pepper and Chinese cooking wine and marinate for 20 minutes. Mix the flour and cornflour and stir in just enough water to form a batter. Stir the batter into the pork.
    2. Heat enough oil in a wok to deep fry the pork on medium heat, then turn the heat to low. Deep fry the pork strips one by one, remove and drain.
    3. Heat the oil again and when it reaches high heat add the pork strips again and deep fry until golden brown. Remove and drain.
    4. Mix the tomato sauce with rice vinegar and sugar. Leave a little oil in the wok, heat and saute the garlic. Pour in the sauce and bring to a boil over low heat. Add the pork strips, stir well and serve.
