Cut the chicken breast into strips, add mix with the sesame oil, soy sauce, sugar and pepper. Marinate in the refrigerator for half an hour.
Remove the skin and seeds of the papaya and cut into strips as well.
Heat the oil in a pan, add the ginger and stir-fry until fragrant. Add the chicken and stir-fry. Add the rice wine and stir-fry until the chicken is opaque. Season with salt. Add the papaya and cook until it is just tender. Sprinkle with additional pepper if desired and serve.
Do not use a papaya which is too ripe or it will become mushy.
