Meat Loaf for Grown-ups

    My wife bought me a round of black pudding (bless her!) as she knows I love the stuff fried with all the other good artery-clogging breakfast delights. With much of it destined for the freezer, I searched for recipes using black-pudding. Here is my version of a combination of several meat loaf recipes. The meat loaf freezes OK.

    Serves: 4 

    • 350g beef mince
    • 350g pork mince
    • 1 small onion, diced
    • 250g black pudding, cubed
    • 1 medium carrot, grated
    • 1 tsp minced garlic
    • 1 tbsp Dijon mustard
    • 1 tsp Sambal Oelek or chilli paste
    • 1 cup breadcrumbs
    • 1 egg
    • 1/2 cup finely chopped parsley
    • 1 tsp Worcestershire sauce
    • 2 tbsp tomato sauce
    • 6 semi-dried tomatoes
    • salt & pepper to taste

    Preparation:25min  ›  Cook:1hour  ›  Ready in:1hour25min 

    1. Pre-heat oven to 180C.
    2. Line a well greased loaf tin with baking paper.
    3. Mix all ingredients by hand until well combined then press into the lined loaf tin.
    4. Bake for about 1 hour. Let cool before turning out onto plate or carefully slice in-situ if serving hot (may crumble when hot).


    The flavour of the meat loaf will differ depending on the ingredients. I used Woolworths Dijon mustard; Always Fresh Sundried Tomatoes with Rosemary; Holbrooks Worcestershire sauce; Woolworths Mince Garlic; Heinz Tomato Ketchup, and fresh parsley.
