This is a delicious and light-tasting Chinese dish that is super easy to make. Chicken, corn, capsicum and light seasoning.


Serves: 3 

  • 2 tablespoons corn oil
  • 2 slices fresh ginger, minced
  • 2 cloves garlic, minced
  • 3 skinless chicken thigh fillets, diced
  • 1 (420g) tin corn, drained and rinsed
  • 1/2 red capsicum, diced
  • 2 spring onions, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon chicken stock powder

  1. Heat the corn oil in a wok, add the ginger and garlic and saute until fragrant.
  2. Add the chicken and stir-fry until medium well. Add the corn and stir-fry until the chicken is cooked. Add the capsicum and spring onions and stir well. Season with salt and a little chicken stock powder and serve.
