Pasta with Pancetta and Peas

    This is a simple dish but the flavours are strong and it's easy to keep the ingredients on hand for a quick dinner.

    Serves: 6 

    • 500g spaghetti
    • 1 tablespoon olive oil
    • 70g pancetta, diced
    • 1/2 large onion, chopped
    • 1 clove garlic, minced
    • 1 (700g) jar passata
    • handful chopped fresh parsley
    • small handful chopped fresh basil
    • 1/2 teaspoon freshly ground black pepper
    • 300g frozen peas, thawed
    • freshly grated Pecorino Romano cheese to serve

    1. Cook spaghetti according to packet instructions; drain.
    2. Heat oil in a large pot over medium heat. Saute pancetta, onion and garlic until lightly browned. Stir in passata. Season with parsley, basil and black pepper. Bring to the boil, reduce heat and simmer 20 to 30 minutes, stirring occasionally. Stir in peas and cook until tender.
    3. Toss with pasta until evenly coated. Sprinkle with grated Pecorino to serve.

    Used different ingredients. I liked this recipe. It reminded me of something my mum used to make us growing up. I've made it twice now but used my home grown tomatoes instead of tomato sauce. I used regular bacon and I tossed it with rigatoni noodles instead of spaghetti. Makes a a nice change for a pasta dish without being too heavy. Thanks!  -  29 Sep 2008


    Used different ingredients. I really enjoyed the combination of flavours and textures in this recipe. Thought it was a nice change from the usual spaghetti/pasta sauce. I followed the suggestion to use coriander and used parmesan cheese for a topping. I also "swished" out the remaining tomato sauce in the can with a little wine and then added that to the sauce-gave it another flavour layer.  -  29 Sep 2008


    Used different ingredients. I thought this recipe was great, but I did make a few additions to it. I added: 1/4 tsp oregano, 1/4 tsp italian seasoning, 1/4 tsp cayenne red capsicumand 1/4 tsp Coriander. I added all the additional ingredients at the same time as with the garlic and basil. I didn't have fresh basil, so I added 1 tsp of dried basil. Kids loved it.  -  29 Sep 2008
